GINGER COOKIES

2/3 cup shortening 1/2 cup brown sugar 2 tsp. ginger 1 tsp. cinnamon 1/4 tsp. cloves or allspice 1-1/2 tsp. salt 1 egg 3/4 cup molasses 3 cups flour, sifted 1 tsp. soda 1/2 tsp. baking powder

Cream together shortening, brown sugar, spices and salt. Add the egg, mix thoroughly. Add molasses and blend. Sift together twice the flour, soda, baking powder and add to the molasses mixture. Stir well and chill. Roll out a fourth of the dough at a time, on floured board to a little more than 1/8 inch thick. Cut with gingerbread man cutters or other shapes. Bake on greased cookie sheets in moderately hot (375-f) oven, 8 to 10 minutes. Cool before decorating.

BUTTER COOKIES

1 cup soft butter, 1/2 cup brown sugar, packed 2-1/4 cups flour, sifted

Cream butter until it resembles whipped cream and slowly add the sugar, beating well. Add flour gradually and blend thoroughly. Wrap in waxed paper and chill for several hours. Knead dough slightly on floured board, form into a smooth ball. Roll to about 1/8 inch thick and cut to desired shapes. Place on ungreased cookie sheets and bake in moderate oven (350-f) about 12 minutes. When cold decorate with butter icing, candied fruit, etc.

DUTCH ALMOND COOKIES

1 cup shortening 1/2 cup white sugar 1 cup brown sugar 2 eggs 1/2 teaspoon vanilla 3 cups flour 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon soda 1/4 teaspoon salt 1/2 cup ground blanched almonds

Cream shortening with white and brown sugar. Add 2 eggs and work in the sifted dry ingredients. Then add the chopped blanched almonds. Shape dough into long rolls. Roll in wax paper and store in cold place for 12 hours. Slice thin and bake in hot oven.

MORAVIAN COOKIES

1/2 cup shortening 1 cup brown sugar 1 cup molasses 1 egg 4 cups flour 1 teaspoon cinnamon 1 teaspoon cloves 1/2 teaspoon nutmeg 1 teaspoon soda

Blend shortening, sugar and molasses. Add beaten egg. Sift dry ingredients and combine. Mix well, roll out and cut in fancy shapes. Bake at 350 degrees for 10 minutes. When cool decorate with boiled icing.

FRUIT AND NUT COOKIES

1 cup shortening 1-1/2 cups sugar 3 eggs 3-1/2 cups flour 1 tsp. salt 1 tsp. cinnamon 1 tsp. soda 1-1/2 tblsp. hot water 1/2 cup raisins, chopped 1/2 cup currants, chopped 1 cup nuts, chopped

Cream shortening and sugar, add the eggs and beat until light and fluffy. Sift flour add salt and cinnamon and sift again. Dissolve the soda in the hot water and add to the creamed mixture. Add half of the sifted dry ingredients mixing well. Fold in the chopped fruit and nuts and the remaining flour mixture. Stir until thoroughly blended. Drop teaspoonfuls on greased cookie sheets, about 2 inches apart and bake in moderate oven (350-f) for 15 minutes.

ANISE COOKIES

6 eggs, separated 1 cup powdered sugar 1 cup flour, sifted 3 tsps. anise seed.

Beat egg yolks until thick and foamy. Beat egg whites stiff and combine with egg yolks. Gradually add the powdered sugar and mix lightly. Sift flour and add to the egg mixture together with the anise seed. Drop from teaspoon on greased cookie sheet, spacing about 1 inch apart. Chill in refrigerator over night. Bake in slow oven (300-f) for about 12 minutes.

LACE COOKIES

Place in a mixing bowl-

One cup of syrup,
Four tablespoons of shortening,
One egg,
Three and one-half cups of oatmeal,
Three-quarters cup of flour,
One level tablespoon of baking powder,
One teaspoon of vanilla.

Beat just enough to mix, then form into round balls and set three inches apart on well-greased baking sheet. Bake for fifteen minutes in moderate oven. Place one-half teaspoon of marshmallow on each cookie.

SWEET POTATO COOKIES

One cup of brown sugar,
Four tablespoons of shortening.

Cream well and then add

One cup of mashed sweet potatoes,
One and one-half cups of flour,
One teaspoon of baking powder,
One-half teaspoon of nutmeg,
Three-quarters cup of raisins,
One egg.

Work to a smooth dough and then roll out on floured pastry board and cut one-quarter inch thick and then bake for eight minutes in a hot oven.

CRUMB COOKIES

One cup of molasses,
One-half cup of brown sugar,
Six tablespoons of shortening,
Two teaspoons of cinnamon,
One-half teaspoon of ginger,
One-half teaspoon of allspice,
One egg,
Five tablespoons of sour milk.

Beat to mix and then add Two and one-half cups of coarse bread crumbs
and sufficient flour to make a very stiff mixture. Drop by the spoonful on well-greased baking sheet, three inches apart. Bake in a moderate oven for ten minutes.

Honey Cookies

Place in a mixing bowl

Three-quarters cup of brown sugar,
Three-quarters cup of honey,
One egg,
Seven tablespoons of shortening.

Beat to blend and then add

Three and three-quarter cups of flour,
One-half cup of seeded raisins,
One-half cup of finely chopped nuts,
One teaspoon of baking powder,
One teaspoon of mace.

Roll and cut and then bake in a moderate oven for ten minutes.

Soft Chocolate Cookies

One-half cup of brown sugar,
One-half cup of syrup,
Six tablespoons of shortening,
One egg.

Cream and then add-

One-half cup of cocoa,
One-half cup of milk,
Two teaspoons of baking powder,
Four cupfuls of flour,
One teaspoon of cinnamon.

Work to a dough and then roll, cut and bake in a moderate oven for eight minutes. Cool and cover with a damp cloth for three minutes. Store in an air-tight container.

California Cookies

Two cups sugar, one cup butter and lard melted, four cups flour, two-thirds cup sweet milk, three teaspoonfuls baking powder, one-half nutmeg, one egg. Mix as for ordinary cake, roll thin, put raisins or salted almonds in center of each and bake a light brown.

Sugar Cookie Recipe

1 cup lard and butter, mixed. 2 cups granulated sugar, and 2 eggs, all creamed together; then add 1 teaspoon soda (mix with a little sour milk). Flavor with vanilla.

Beat all well together. Add flour enough that they may be rolled out, no more. Flour bake-board well; cut dough with cake cutter into small round cakes and bake in a rather quick oven. This recipe will make a large number of cakes if dough be rolled thin as a wafer. If cake dough be mixed one day and allowed to stand over night, cakes may be rolled out much more easily and cut thinner.

Pilgrim Cookies

Let soak overnight one cup of seedless raisins, then drain and dry on a cloth. Cream one-third a cup of butter; beat in one cup of brown sugar, one tablespoonful of milk, and two eggs, beaten light. Add the raisins, and one cup of flour, sifted with one-half a teaspoonful, each, of nutmeg and cinnamon and two teaspoonfuls and one-half of baking powder. When thoroughly mixed, add one-half a cup of graham flour, unsifted, and one-half a cup of bran, unsifted.

Grandmother's Cookies

One cup of sugar, one half cup of Armour's Simon Pure Leaf Lard, one half teaspoon of salt, one egg well beaten, two cups of flour in which two teaspoons of baking powder have been mixed, one cup of sweet milk and one teaspoon of lemon extract. Roll the dough, cut with biscuit cutter and bake in moderate oven.

Brown Cookie Recipe

Boil together for five minutes the following ingredients: One cup of brown sugar, one cup of water, one cup of seeded raisins, one half cup of Armour's Simon Pure Leaf Lard, one teaspoon of ground cinnamon, one half teaspoon of nutmeg and a pinch of salt. Remove from the stove and let cool. When cold add one level teaspoon of soda dissolved in hot water and add three and one half cups of flour and one teaspoon of baking powder. Drop from teaspoon on greased pan and bake in moderate oven.

Corinita Cookies

One cup sugar, one-fourth cup butter, three eggs well beaten together, one cup milk, two teaspoonfuls baking powder well sifted in two cups flour.

Sour Cream Drop Cookies

Cream 1/4 cup butter or margarine. Add gradually 1/2 cup sugar and 1 egg, well beaten. Dissolve 1/4 teaspoon soda in 1/4 cup rich sour cream. Add to first mixture alternately with 1 1/4 cups pastry flour sifted with 1/4 teaspoon salt and 2 teaspoons baking powder. Add 1/2 teaspoon vanilla 1/4 cup raisins cut in pieces and 1/4 cup nut meats cut in pieces. Drop by spoonfuls on greased tin sheet, and bake in a moderate oven.

Double the amount of flour may be used, nuts and raisins omitted, and mixture chilled and rolled out and cut in any desired shape, before baking.

Cookies

Three eggs, two cups of sugar, one cup of butter, one cup of sweet milk, two teaspoons baking powder mix soft, roll thin, bake in a quick oven.

Cookies

Beat to a cream one cup of butter, two and one-half cups of sugar and the yolks of two eggs. Add a cup of sour cream, into which has been dissolved a small teaspoonful of soda; beat the whites of four eggs to a stiff froth; add to the butter and sugar; flavor to taste; use as little flour as possible to make of consistency to roll thin; sprinkle with sugar; flour the cutter to keep dough from sticking; bake in a quick oven.
